Description

A creamy, cheesy soup loaded with ground beef, potatoes, and pickles for all the flavors of a burger in a bowl.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 medium potatoes, peeled and diced
  • 2 cups chicken or beef broth
  • 1 ½ cups milk
  • 2 cups shredded cheddar cheese
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 cup diced dill pickles (optional but amazing!)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large pot, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  • Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-12 minutes.
