I made these last weekend after a long hike (because obviously, I earned them, right? 😅), and OH. MY. GOODNESS. They were perfectly crisp on the outside, soft on the inside, and that warm chocolate core?? Absolute heaven. 🍫🔥

Chocolate Chip Lava Cookies


Ingredients

1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar (packed)
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups semi-sweet chocolate chips
8 oz semi-sweet or dark chocolate bars, cut into 1-inch squares


Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Add the eggs and vanilla, beating until smooth.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture.

Stir in the chocolate chips — try not to eat too many as you go 😉

Scoop out a heaping tablespoon of dough and flatten it slightly in your palm. Place a piece of chocolate in the center and cover it with another small scoop of dough. Seal the edges and roll gently into a ball.

Place cookies on the baking sheet, about 2 inches apart.

Bake for 10–12 minutes, or until the edges are golden but the centers are still soft.

Let cool for just 5 minutes (if you can wait that long!) before digging in. That warm, molten center is waiting…
