Flaky pastry, melty cheese, savory ham, and fluffy eggs—it’s like a little breakfast miracle wrapped up in golden perfection.

What I love most? They’re freezer-friendly! I can make a batch ahead of time, stash them in the freezer, and reheat them in the oven or air fryer for a quick and cozy meal. Perfect for busy weekdays or lazy weekends when I want something special without the extra effort.

Easy Ham & Cheese Breakfast Pockets


Ingredients

  • 1 sheet puff pastry, thawed
  • 4 large eggs, scrambled
  • ½ cup diced ham
  • ½ cup shredded cheddar cheese
  • 1 tbsp milk (for egg wash)
  • 1 tsp butter (for cooking eggs)

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a pan, melt butter over medium heat. Scramble the eggs until just set. Remove from heat.
Roll out the puff pastry and cut into 4 equal squares.
Spoon scrambled eggs onto one half of each square, leaving space around the edges. Add ham and sprinkle with cheese.
Fold the pastry over the filling, pressing the edges with a fork to seal.
Brush the tops with egg wash (1 egg whisked with 1 tbsp milk).
Bake for 15-18 minutes or until golden brown and puffy.
Let cool slightly before enjoying!
