They started curing it with salt—creating what we now call corned beef—and paired it with cabbage, which was inexpensive and easy to cook. Over time, this delicious combination became a beloved St. Patrick’s Day tradition in the U.S.! 🍀

Corned Beef and Cabbage Dinner
Ingredients
3–4 lb corned beef brisket (with spice packet)
10 cups water
1 onion, quartered
3 cloves garlic, smashed
2 bay leaves
1 tsp black peppercorns
4 large carrots, peeled and cut into chunks
6–8 small potatoes, halved
1 small head cabbage, cut into wedges
Instructions
Prepare the beef – Rinse the corned beef under cold water to remove excess salt. Place it in a large pot and cover with water. Add the spice packet, onion, garlic, bay leaves, and black peppercorns.
Simmer – Bring to a boil, then reduce heat to low. Cover and let simmer for about 2.5–3 hours, or until fork-tender.
Add the veggies – Toss in the carrots and potatoes, then simmer for another 20 minutes.
Cabbage time! – Add the cabbage wedges and cook for an additional 10–15 minutes, until tender.
Slice and serve – Remove the corned beef, let it rest for a few minutes, then slice against the grain. Serve with the veggies and some broth ladled over the top.

Slow Cooker Method 🕰️ Want a hands-off approach? Try making corned beef and cabbage in the slow cooker! Simply place the corned beef, onion, garlic, bay leaves, and peppercorns in the slow cooker. Add enough water to cover the beef. Cook on low for 8–10 hours or high for 4–5 hours. About 2 hours before serving, add the potatoes and carrots. Then, 30 minutes before serving, add the cabbage. Slice, serve, and enjoy a stress-free St. Paddy’s Day meal! 🍽️💚
