Avocado and Bacon Breakfast Pizzas


Ingredients

2 personal-sized naan breads

2 ripe avocados

Juice of 1/2 lemon

Salt and pepper, to taste

4 slices crispy bacon, crumbled

2 large eggs

1 tbsp butter or olive oil

Red pepper flakes (optional)

Fresh parsley or chives, for garnish


Instructions

Preheat your oven to 375°F (190°C). Place the naan breads on a baking sheet and warm them for about 5 minutes.

While the naan is warming, mash the avocados in a bowl with lemon juice, salt, and pepper.

Cook the eggs sunny-side up in a skillet with butter or olive oil until the whites are set but the yolks are still runny.

Remove the naan from the oven and spread the smashed avocado evenly over each piece.

Sprinkle the crispy bacon over the avocado, then carefully place a cooked egg on top of each pizza.

Finish with a pinch of red pepper flakes (if you like a little heat) and garnish with fresh parsley or chives.

Serve immediately and enjoy your perfectly balanced, delicious breakfast!
